Summer is all about fresh seasonal fruits and light, healthy salads. This fig salad is one of my favourites, so I thought I’d share it with you so you can give it a go at home, too.
If you have a copy of my book Eat Beautiful you’ll know that my skin-first beauty approach includes a diet packed with fresh, healthy, seasonal foods. Summer is a great time to add figs into your diet. They are full of fibre, so they flush through the system quickly and help to detoxify the skin, meaning they are a great choice if you have psoriasis, acne or other skin conditions. They also add a touch of natural sweetness to dishes, making a healthier alternative to processed sugars.
OK, I’m sure you’re sold on this! So here’s my Fig Salad recipe, from Eat Beautiful…
Ingredients:
Serves 2
230 calories per serving
100g burrata or buffalo mozzarella
2 fresh figs, quartered
2 large handfuls of rocket
1 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
Fresh basil, to serve
Method:
Break the burrata or mozzarella into bite-sized pieces and place in a bowl with the figs. Add the rocket and mix well to make sure everything is evenly distributed.
Dress at the last minute, drizzling over the olive oil and balsamic vinegar in a zigzag motion and scatter over basil leaves to serve.
